Cranberry Beans can be used to grow sprouts or microgreens. Try cranberry beans in your your favourite bean soup!

Sprouting Directions 

Soak: Put approximately 1/4 cup seed in a wide mouth jar with a sprouting lid. Add water, swirl, and drain. Refill jar with water and soak 6-12 hours. Drain well and invert jar at an angle on a sprouting rack, or in a bowl or drain rack.

Rinse: Twice a day, refill jar with cold water, swirl, and drain.

Enjoy! Ready to eat in (2-3) days. Refrigerate to store.

These beans make lovely microgreens! The large leaf pretty much replaces store-bought lettuce. Combined with other microgreens such as sunflower, buckwheat, lentil and speckled peas and mixed sprouts they make a wonderful salad! They grow a bit unevenly, which is perfect because I can snip off a few shoots when I make my salad and leave the rest to grow. My favs!

I grew these as sprouts to use as juice, as I have in the past, but I'd rather eat them as sprouted beans instead (once sprouted, I cook them before eating). This year, I decided to plant 2 of the sprouts and lo and behold, just today I saw them growing pods like green beans! I planted the seedlings/sprouts in pots on the balcony, so if you are looking to grow beans, definitely worth a try.
