These beans make lovely microgreens! The large leaf pretty much replaces store-bought lettuce. Combined with other microgreens such as sunflower, buckwheat, lentil and speckled peas and mixed sprouts they make a wonderful salad! They grow a bit unevenly, which is perfect because I can snip off a few shoots when I make my salad and leave the rest to grow. My favs!

I grew these as sprouts to use as juice, as I have in the past, but I’d rather eat them as sprouted beans instead (once sprouted, I cook them before eating). This year, I decided to plant 2 of the sprouts and lo and behold, just today I saw them growing pods like green beans! I planted the seedlings/sprouts in pots on the balcony, so if you are looking to grow beans, definitely worth a try.
