The Ultimate Sprouted Veggie Burger

Preparation

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk flaxseeds with the warm water. Let sit for 5 minutes to thicken.
  3. In a food processor, pulse chickpeas until about 70% smooth and mashed, with some texture remaining. 
  4. In a large bowl, combine flax mixture, chickpeas, and all remaining ingredients. Mix well.  
  5. Shape into 6-8 patties and place on parchment-lined baking sheet. 
  6. Bake for about 15 minutes, then carefully flip each patty. Bake for another 12-15 minutes until golden and firm. (Alternatively, you can also pan-sear each patty in a lightly oiled slipper for 4-5 minutes per side.) 
  7. Cool for 5 minutes before serving to allow patties to firm up a little more. Serve & enjoy!
