Preparation
- 1. Prep the beans: Steam or simmer gently for about 5–10 minutes until tender but not mushy. Drain and let cool slightly.
- 2. Blend: In a food processor, combine mung beans, tahini, lemon juice, garlic, olive oil, salt, cumin, turmeric, and black pepper.
- 3. Adjust texture: With the motor running, slowly drizzle in cold water (or olive oil) until the hummus is creamy and smooth. Taste and adjust salt, lemon, or spice as desired.
