Preparation
- Heat olive oil in a pot & sauté onion until soft. Add ginger, garlic, carrot, bell pepper, and spices and stir a few minutes until fragrant.
- Add maple syrup (optional) and vegetable broth. Boil & let simmer for 10 minutes.
- Add coconut milk and sprouted lentils. Turn off the heat and cover the pot for 5 minutes.
- Adjust seasoning with salt and pepper as needed. Serve over warm rice.
